| MUSTARD
Mustard is a product made from yellow and black mustard seeds. Ground seeds are soaked in marinade ( vinegar, sugar, salt and spices) for one day after the dry grinding and then grinded in a corundum mill into a mustard. This then acquires its unique scent and taste in the process of maturing ( fermentation), which lasts 30 days. The ratio between the yellow and the black seeds determines the sharpness of the mustard and spices and herbs give it the nobleness of scent and taste.
Mustard definitely shouldn't be lacking in a good cuisine, since it is an indispensable spice for the preparation of different salads, baking of meat and it is always eaten with a good hot-dog or sausage.
